Contemporary heritage dining destination delivered within the historic formal dining room of Raffles Hotel Singapore, reimagining the former Raffles Grill and Elizabethan Grill spaces through a refined blend of colonial elegance and modern luxury. The restaurant concept, created by Chef André Chiang, draws inspiration from Singapore’s multicultural culinary history, Belle Époque influences, and the storied legacy of Raffles Hotel since its founding in 1887.

Scope included bespoke architectural joinery, custom banquette seating, feature wall treatments, integrated lighting systems, concealed service coordination, precision metal and stone detailing, and high-finish hospitality fit-out works throughout the main dining and private dining spaces. Extensive coordination was required within the operational and conservation constraints of the National Monument property, ensuring minimal disruption while preserving the integrity and grandeur of the heritage interiors.

Interior finishes and detailing were developed to complement the restaurant’s “heritage gastronomy” concept — balancing timeless European dining references with contemporary warmth and craftsmanship. The project incorporated highly controlled lighting, tactile material palettes, and custom-fabricated elements designed to enhance the immersive dining experience while reflecting the sophistication and narrative-driven approach of the restaurant. The restored dining environment also references the historic character of Raffles Hotel through carefully integrated heritage-inspired details and formal spatial composition.
